so I"m new to this. How exactly does it work? Can you choose a story you love, or does it have to be new/collaborative?

If by new you mean written brand-new for this challenge, then no, you will need to choose an existing 30k story to record. And because this is a gift exchange, you'll want to choose a story that your recipient will like and that you will also enjoy recording.
