My only suggestion (totally only a suggestion, though) would be to crop to a square cover, like a CD cover, as that displays best in iTunes, etc.

There are several ways to go about it. The easiest is to choose the crop tool and enter the parameters you want (I use at least 3 in by 3 in at 72 ppi) and then click and drag out the square on your picture. You can move it around by holding down the command key on a Mac, alt on a PC, I think, and holding down the left click on your mouse while you drag.

If you need to add canvas to make a square because your picture can't be cropped, you can choose canvas size from the image menu, change the smaller number to match the larger one, choose a color for the canvas and voila. This also helps when you can't easily fit your text on the original picture.
